DIRECTIONS

  1. Place all the ingredients in a large sauce pan or stockpot including salt and pepper. Cover with water and bring to a boil. Cover and simmer for one hour or until the carrots are soft. Strain and remove thyme and bay leaf. Serve the same day, or the next day when reheated mixture will be tastier. Serve with butter and cream.

Once again after I made this my husband told me they are the best vegetables he's ever had. I do remember eating this in Normandy, but I don't think I realized Mamy's bacon/salt pork secret until I started cooking these recipes myself. I love it! Even if it's not healthy - but I never said these recipes would be healthy, just easy, authentic and delicious!
