Scalloped potatoes baked in brie and bacon.

INGREDIENTS

**You cannot find Reblochon in the U.S. so you need to use an alternate cheese like raclette of thin layers of Brie or Camembert. Taste will be slightly different.

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Sauté potatoes, onions and bacon in a little olive oil. Place potato mixture in a deep gratin dish. Cover with slices of cheese and bake in oven until cheese is melted. Make layers.

Talk about comfort food! Potatoes, oil, bacon, french cheese - I'm sure my mom made this for us and I simply don't remember. But I've noticed a pattern with Mamy's cooking. Just add bacon (or salt pork). It's really not a bad idea.
