SALMON IN MUSHROOM
CREAM SAUCE

Salmon with Mushroom Cream Sauce and a side of baby carrots and yellow potatoes

INGREDIENTS

**I use Mexican table cream

DIRECTIONS

  1. In olive oil, sauté onion, garlic and shallot until they are transparent (not brown).
  2. Cook fresh or frozen salmon on medium heat from 5 to 8 minutes, add lemon juice and white wine. Salt and pepper. Add thyme, bay leaf and parsley. After 5 minutes, add the mushrooms. Cook for 8 minutes.
  3. Right before serving add fresh cream and simmer the fish until heated through 8 to 10 minutes.
  4. Serve with potatoes, carrots, zucchini, or spinach according to taste, or mixed (English style, meaning boiled).

ABOUT

This recipe was hand written on a note pad and at the end it reads "With all my love, your mom, Collette." This was written for my mom probably because it was the first time I discovered I might like fish. To be honest I loved all the fish recipes Mamy made, but I specifically remember this was my favorite. I told my mom in private I didn't like fish but she said, "Mamy made this for us, and it is rude to not eat it." It was true, I didn't want to be a brat to my grandmother, so I ate it and voila! a love for trying things I thought I wouldn't like came to me. So even if you don't like fish, try this recipe.
