PIGEONS AND PEAS

Cornish hen with peas and salt pork

INGREDIENTS

**you cannot find pigeons in the U.S.A. Use cornish hens instead.

DIRECTIONS

  1. Rinse the cornish hens and dry with paper towels.
  2. Cut and dice ham
  3. Mix salt, pepper and basil; rub the cornish hens in and out with this mixture.
  4. In a dutch oven, melt the butter; saute the minced onions for 2-3 minutes, then add the hens to cook on all sides.
  5. Add ham and wine. Cook on medium heat for 10 minutes. Add bouillon cube and cover the pot. Simmer for 30 minutes the add the green peas and the pearl onions. Cover again and continue cooking for 15 minutes or until the cornish hens are cooked. Serve the hens on a dish, with the green peas and pearl onions, cover with the cooking juices.

I probably ate this while visiting Mamy since there are original pictures of it, but I probably thought I was eating chicken. Oh well! This is easy but time consuming. I think it is a good meal to pretend like you made something complicated since not a lot of people are given an entire cornish hen to eat.
