LEEK SOUP

Leek soup in a white bowl with cream, parmesan cheese and croutons

INGREDIENTS

DIRECTIONS

  1. Clean the leeks and slice the bottom white parts into 1/2 inch slices.
  2. Peel and dice the potatoes and rinse them.
  3. In a large pot, add the cut up leeks and the diced potatoes. Cover with cold water.
  4. Add the Kosher salt and pepper. Bring to a boil and reduce heat to simmer.
  5. Cook for about an hour.
  6. Mix in blender. Serve the soup with croutons and rated cheese

This recipe has a very distinct taste. I love it and was so excited when I made it for the first time for this site because it turned out perfectly! I felt like I was whisked away to Mamy's house. But I say it's a distinct taste for a reason. My husband said it was very good, but he likes some of the other soups more. Also note that at the grocery store I frequent, I can only find leeks in the organic section. I also pretty much use yellow potatoes on all of Mamy's recipes unless stated otherwise.
